RECIPE - Baked Eggplant Patties The Vegetarian Librarian www.veglib.com 1 large eggplant 1 cup olive oil (approximately) 1 cup breadcrumbs 1/2 tsp sea salt + 1 Tbs 1/4 tsp garlic powder fresh ground pepper Peel eggplant in stripes longways, leaving some of the skin on. Remove ends and cut in 1" slices. Place slices in a strainer, cover with about a tablespoon of sea salt and let drain for about a half hour to remove bitterness. Preheat oven to 400 degrees. In a shallow bowl, combine breadcrumbs, 1/2 tsp salt and spices. Place eggplant slice in breadcrumb mixture, cover evenly and tap off any extra breading. Place on a well oiled cookie sheet. Repeat until all are covered with breading. Drizzle with olive oil and bake for 15 minutes. Remove pan from oven, flip patties, drizzle with a little more oil and bake for another 15 minutes. If slices still aren't crisp to your liking, flip the patties again and bake for another 5 minutes. Great with pasta or for sandwiches! Gaji namul is a sidedish made with eggplants. It's a very traditional Korean vegetarian dish. Hope you like it! Full recipe: www.maangchi.com Ingredients: 3 medium sized Asian eggplant, 2½ tbs soy sauce, 1 chopped green onion, 2 cloves of garlic, ½ tbs of roasted sesame seeds, ½ tbs of sesame oil, 1 ts of hot pepper flakes 1. Cut 3 medium sized Asian eggplants into 2 or 3 pieces. Then cut each piece in half lengthwise 2. Pour 2 cups of water into a steamer, and place the pieces of eggplant inside. Bring to a boil for 15 minutes over high heat. 3. Turn the heat off and move the cooked eggplant to a bowl. Set it aside to cool down. 4. After the eggplant has cooled, drain the liquid from the bottom of the bowl. 5. Tear each piece of eggplant lengthwise with your fingers, and put the strips into a large bowl. 6. Add these seasonings to the bowl: 2 cloves of minced garlic, 1 ts of hot pepper flakes, 1 chopped green onion, ½ tbs sesame seeds, 2½ tbs soy sauce, and ½ tbs sesame oil. 7. Mix it all together with your hand. Serve with rice as a side dish. I'm Sonia, and today we'll be preparing a dish with a very Mediterranean flavour: Eggplant(Aubergine) Parmesan. Let's take a look at the ingredients we'll be using: • 1400ml/6 cups of tomato puree • Extra virgin olive oil • One small onion • Two cloves of garlic • Table salt • Fresh basil leaves • 1.5kg/3lbs eggplant/aubergine • Coarse or kosher salt • 300g/11oz of a firm, savoury Italian cheese suitable for melting • 150g/1 cup grated parmesan cheese • Some canola or vegetable oil for frying the eggplant OK. Let's begin preparing our eggplant parmesan! First slice the eggplant into slices about a centimetre (a little less than a half inch) thick. Now in a sieve resting over a bowl, form layers of the eggplant slices, sprinkling a pinch of coarse salt between each layer.
